When we die, do we get the knowledge of our soul's entire journey?

First of all, your intrinsic reality never dies. It is only the body that leaves you, which is referred to as "dying." Which you know as dying. So it is really the body that dies, not you. You are eternal, and you never die. You cannot die. And yes, as a soul, you carry the knowledge, or rather, the knowing of not just the current life but of all your past lives and past karmas. These past karmas are known as Sanchita karma, but then, that is another topic.
